Introduction
Domaine William Fèvre, the largest owner of Grands Crus in Chablis, covers 70 hectares or 90 separate plots in the heart of the Chablis vineyards. For nearly 20 years, the estate has been committed to a strong environmental approach. The first of the Chablis estates to be certified HVE3 certification since , the majority of the vineyard is farmed biodynamically.
The team is committed to working the soil while respecting biodiversity, and we do everything in our power to express the most subtle variations offered by the Kimmeridgian and Chablis soils. The work we do is to accompany, sublimate and not transform what nature and the terroir gives us.
The Vineyard
&#;The steep, stony slopes to the right and left of the Serein are the cradle of a history that goes back over one hundred and fifty million years. This unique Kimmeridgian terroir, alternating marl and marly limestone, gives Chablis wines their mineral character and immense freshness. It&#;s an envied characteristic, often imitated but never equalled.

ウィリアム・フェーヴルは、年頃に設立したドメーヌ。年にウィリアム・フェーヴル氏がドメーヌを相続し、シャブリ最大の特級畑所有ドメーヌとなり、シャブリ随一の造り手として名声を博してきました。また、キンメリジャン土壌以外のエリアにまでシャブリ呼称を拡大する動きに異議を唱えたり、新世界で作られた白ワインの「シャブリ」名称の濫用を提訴、使用を禁止させることで、シャブリの原産地呼称の保護に大きく貢献。彼の引退後は、ブルゴーニュの名門ブシャール・ペール・エ・フィス社の改革に成功し注目を浴びていた、ジョゼフ・アンリオ氏にドメーヌの将来を託されました。 現在ウィリアム・フェーヴルは、シャブリに7つ存在する特級畑のうち、5つを所有する唯一のドメーヌで、一級畑においても選り抜きの区画を所有。また、ACシャブリとしての所有畑も、年代以降にシャブリ地区の畑が拡張される以前からある伝統的な区画に集中しています。現在では所有する畑を80もの区画に細分化し、それぞれに収穫日と最適な醸造方法を決定、熟成まで個々に管理。醸造責任者はディディエ・セギエ氏が担当。IWC ホワイントワインメーカーオブザイヤーを受賞するなど、輝かしい功績を獲得しています。また年からは一部畑でビオロジックを実践し、年にはすべての畑で導入するなど、先進的かつ独自のスタイルを確立し、ラヴノーやルネ・ドーヴィサなどのカリスマ生産者と並んで、シャブリ最高の造り手として賞賛されています。

William Fèvre declared his first vintage in , marking the birth of the domaine and a pivotal moment in the production of quality-focused Chablis. Garnering over years of family experience working the land in this region, Fèvre established himself as a winemaker with a modest seven hectares of vineyards. Slowly and methodically, the domaine acquired new vineyard sites in Chablis over the years, all situated in historic terroirs. At the same time, it became synonymous with technological advancement and led the charge of environmental stewardship, embracing organic viticulture since (certification commencing from the vintage), and biodynamic practices initiated in across 32 hectares.
The vineyards boast an impressive average vine age ranging from 30 to 60 years, with some dating back to the s. Aging of the crus takes place for 13 to 14 months, with 40 to 50% of the harvest spending 5 to 6 months on fine lees in French oak barrels, without new oak.
