Underwood was a 14th-round pick of the New York Giants in the NFL draft but played just one injury-shortened season with the team. He also had brief stints with the Atlanta Falcons and Denver Broncos but is more well-known for his time with the Houston Oilers.
During his time in the NFL, Underwood attended the University of Houston and earned a law degree. Following retirement, he was appointed the first judge of the th District Court and spent 40 years serving the State of Texas as a judge in Montgomery County.
Underwood also founded the Student Transition and Recovery (STAR) Program and the You Are My Sonshine Ministries.
